This is a tradition in the Wood family. We make pumpkin stew around Mike's birthday. It's a tomato soup base with meatballs that have pimentos and onions mixed in.
You bake it in the oven and then scrape the cooked pumpkin meat into the stew. It's awesome!
Brown the meatballs first, so you don't end up with one huge glob of meat...
